This week, I will be making a recipe for Peppermint Cookies from landolakes.com!
Ingredients
- ¾ cup of sugar
- ½ cup of Land O Lakes Butter, softened
- 1 egg
- ½ teaspoon of vanilla
- 1/8 teaspoon of peppermint flavoring
- 1 2/3 cups of all-purpose flour
- 1 teaspoon of cream of tartar
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- ½ cup of crushed mini candy canes or peppermint candies
- ¼ cup of sugar
Procedure
- Heat the oven to 350 degrees
- Line cookie sheets with parchment paper; set aside
- Combine the sugar, butter, egg, vanilla, and peppermint flavoring in a bowl
- Beat at medium speed, scraping the bowl often, until creamy
- Add flour, cream of tartar, baking soda, and salt; beat at low speed until well mixed
- Stir ¼ cup of crushed candy into the dough
- Stir in the remaining ¼ cup of crushed candy into the ¼ cup of sugar
- Shape dough into ¾ inch balls; roll into the sugar mixture
- Place 2 inches apart on prepared cookie sheets
- Bake 8-10 minutes or until the edges are lightly browned
- Cool 1 minute on cookie sheet
- Remove to cooling rack
- Cool completely

My Thoughts
The cookies turned out really well, they weren’t burnt at all and the consistency was perfect. The cookies are almost like mini cakes with the cookie melting in your mouth. The only thing is that the crushed peppermint candy canes on top were not soft nor cooked at all. They sort of don’t go with the cookie.
Suggestions
Crush the candy canes to fine pieces, almost into powder form, and sprinkle throughout the mixture instead of putting the hard pieces on top.
