Cooking Corner: Zucchini Bread

This week, I will be trying a recipe for my favorite dessert, zucchini bread from http://allrecipes.com/recipe/moms-zucchini-bread/!

Ingredients

  • 3 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 3 teaspoons of ground cinnamon
  • 3 eggs
  • 1 cup of vegetable oil
  • 2 ΒΌ cups of white sugar
  • 3 teaspoons vanilla extract
  • 2 cups of grated zucchini

Procedure:

  • Grease and flour two 8×4 inch pans
  • Preheat the oven to 325 degrees
  • Sift the flour, salt, baking powder, baking soda, and cinnamon together in a bowl
  • Beat the eggs, oil, vanilla, and sugar together in a bowl
  • Add the sifted ingredients to the creamed mixture, and beat well
  • Stir in the zucchini
  • Pour the batter into the prepared pans
  • Bake for approximately 40 to 60 minutes
  • Cool in the pan for 20 minutes
  • Remove the bread from the pan and completely cool
  • Enjoy!

My Thoughts: I thought the zucchini bread was perfect! It had a really rich taste, resembling pumpkin bread! I have no critiques!
